Marshmallow Pecan Stuffed Sweet Potatoes

This is a truly fun and festive way to serve one of Americas favorite Thanksgiving side dishes. Candied Sweet Potato Casserole serve individually as stuffed twice baked sweet potatoes. And all made right in your air fryer!

Ingredients Needed For Air Fried Stuffed Sweet Potatoes (screenshot for grocery list)

  • Sweet Potatoes
  • Oil
  • Salt
  • Unsalted Butter
  • Brown Sugar
  • Nutmeg
  • Cinnamon
  • Chopped Pecans
  • Mini Marshmallows

How To Make Stuffed Candied Sweet Potatoes In An Air Fryer

  1. Prick sweet potatoes with fork. Rub with oil and salt. Transfer to air fryer basket. Air fry at 400ºF for 40-45 minutes or until tender and cooked through. Let cool enough to safely handle.
  2. Cut sweet potatoes in half, lengthwise. Carefully scoop out the insides leaving the skins intact. Transfer sweet potato filling to large bowl.
  3. Add butter, brown sugar, nutmeg. cinnamon and a pinch of salt to bowl. Mash until evenly combined.
  4. Spoon filling mixture back into skins. Top with pecans and marshmallows. Gently press the marshmallows down into the filling to prevent them from flying off.
  5. Air fry at 400ºF for 2-4 minutes depending how browned you want your marshmallows. Serve immediately.

Cooking time varies depending on each air fryer brand. I have owned several different air fryers and each brand cooked very differently. Use this recipe as a guideline or starting point and adjust depending on your air fryer.

  • 2 Large Sweet Potatoes – thoroughly washed
  • 2 Tablespoons Oil
  • Salt
  • 2 Tablespoons Unsalted Butter – melted
  • 1/4 Cup Brown Sugar
  • 1/4 teaspoon Nutmeg
  • 1/2 teaspoon Cinnamon
  • 1/2 Cup Chopped Pecans
  • 1/2 Cup Mini Marshmallows

Notes

If not serving immediately, prep up to the last step. Then heat just before serving.
